I have never worn a watch without AR coating and at any point I felt like the lack of AR coating was an issue in any way. I also agree that AR coating can diminish how good the glass on a watch looks for two reasons: 1. The AR coating can make the glass less clear. 2. The AR coating, when applied on the outside, can scratch.

I was very much on the fence about the ar coating on the outside, but the fact is that this is becoming an industry standard for mid-tier and top-tier watches, so there must be ways to cope with this, even thou you buy saphire crystal to avoid damage in the first place.
FWIW Breitling uses AR-coating on both the inside and outside of the their glass. This gives the no-glass-there appearance. More brands used to do double AR-coating but coating on the outside will eventually get scratched up and makes the watch look less premium. With a MOH hardness of 9 (diamond being a 10) a scratch on the crystal itself is highly unlikely. Some owners have elected to remove the outside AR coating when scratched for aesthetics when it bothered them too much. A new crystal is of course quite expensive as part of a manufacturer service.
